Infuse Florida’s sweet summer fruits with raw local honey using lacto-fermentation! Inspired by the NOMA Guide to Fermentation and our pals at Queen & Colony, participants will merge ancient fermenting techniques with native plants. We achieve lactic acid fermentation in honey by lowering the sugar content, allowing live cultures to flourish. A tasty treat for summer iced teas, yogurt topping, and desserts!

We will provide a variety of local native fruits and plants to experiment with. Participants are encouraged to bring their own food forest edibles as well! Everyone will make their own infused lacto-honey creations to take home. Queen & Colony’s raw local honey will be available for purchase.
